I know I have put up similar posts before, but I thought that the less fortunate of us living in the south may want to see them again.

This char was from more northern waters. It was frozen and on thawing out it had the smell and feel of a fish fresh just out of the water.

On cooking it maintained its deep red color and on tasting it, well it was out of this world, just like fresh caught char cooked on an open fire beside the sea.

That looks great! I got out last evening and took part in our Food Fishery here. We got our quota quickly but the Fish were not that big. I'll stick a few pics on my blog today of that Cod Fishing adventure.

Now you know who had the head Shamm. No Inuit traditions of sharing when it comes to fish heads.

There are frozen cod fillets in Northern, 6 for 26 bucks. I love cod but have to draw the line at that.

I special ordered arctic char from a fish market in Boston. How much, you ask? $19.99/lb. It was goooood though.

Ouch, that's a lot. do you know if it was wild or farmed? Canadian or imported?
Being up here it is simpler, though the taste does change from region to region.
